Ceviche is a South American dish made of seafood cured in lime jjuice. Ceviche is high in antiinflammatory fatty acids, which is good for Autoimmune Disorders.

 3 lbs Salmon Fillets
 2 Avocados
 1 cup Cucumber
 1 cup Yellow Zuccini
 Red Onion
 2 Medium Tomatoes
 1 tbsp Garlic
 2 tsp Ginger
 2 tbsp Freshed Dill
 1 tsp Toasted Sesame Oil
 2 tbsp Olive Oil
 1 cup Lime Juice
 24 tsp Dijon Mustard
 1 cup Cayenne Powder
 Sea Salt
 Freshly Cracked Pepper

Soak the fillets in salted water for 20 minutes. Remove and pat dry.

Slice the salmon into half-inch strips, then half inch cubes and place into a medium sized clear serving bowl. Add the lime juice and mix in with the diced fish, coating the fish as completely as soon as possible.

In a separate mixing bowl, combine the remaining ingredients and mix very well,

Pour over the fish, stir in and refrigerate for 4 hours. Taste, season and serve.

Ceviche should be eaten within 3 days of preparation.
